oatmeal cookie goodness

I’m a sucker for carbs. I’m a sucker for oatmeal things. I’m a sucker for treats. I f*ing love oatmeal cookies – they’re my favorite – so when I discovered this recipe I had to put these bad boys on the “to make” list immediately. I haven’t gotten around to it just yet (there are a lot of things on there, ok?), but it’s hard to imagine these butter-free, dairy-free and flour-free disks of oaty goodness could disappoint. I mean, they even have peanut butter in them (although it seems easy enough to take out if that’s not your thang.)

Here it is (thanks to bitesandbliss):

  • 1.5 cups quick cut oats**
  • 1/4 cup white sugar
  • 1/2 cup brown sugar (unpacked)
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1/2 cup peanut butter

Preheat the oven to 350°. Mix the dry ingredients then add the eggs, vanilla extract, and peanut butter. Mix by hand until well combined.

Spoon onto baking sheet lined with parchment paper with 2” between each cookie. Bake 15-20 minutes until slightly set. Let cool to set completely.

**Note: You can use thick cut oats but may need to reduce the amount slightly.

Yep, looks like a winner to me!
